BAKING

POST UR BAKING HERE!!!

Tonight I made a batch of pomegranate muffins for future breakfasts! I hadn't used this recipe before, so I wasn't sure what to expect, but they're good! They taste a lot like cornbread, which was surprising but not unwelcome.

Gluten Free Fruit Muffins

Ingredients:

  • 6oz Buttermilk (can also use 3oz milk with 3oz plain yogurt)
  • 2 Tablespoons of lemon juice
  • 2 Eggs (I used 6 teaspoons of mayonnaise because I was out of eggs, it worked fine)
  • 1 tablespoon melted butter
  • 21/2 cups of gluten free flour mix
  • 1/4 Cup of a starch (such as potato or corn starch)
  • 4 teaspoons of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 cup sugar
  • 11/4 cup fruit (fresh berries or small chunks)

Directions:

  1. Grease 12 muffin pan and pre-heat oven to 400 degrees
  2. Mix buttermilk (or milk + plain yogurt) , melted butter, lemon juice, and eggs (or mayonnaise) together in a medium bowl or measuring cup.
  3. Mix flour, starch, baking powder, baking soda, and salt together in a large bowl.
  4. Toss fruit in 1 tablespoon of the dry ingredient mix
  5. Combine wet and dry mixtures in the large bowl.
  6. Gently fold in the fruit mixture.
  7. Bake for at least 8-10 minutes at 400 degrees, or as long as it takes.
